Questo tipologia di caviale si ottiene dallo storione bianco, una specie originaria dell’oceano Pacifico e distribuito dall’Alaska fino alla Bassa California.
Oltre che per la sua carne magra ad alto contenuto proteico, è particolarmente pregiato per la sua cospicua produzione di uova di grande dimensione, da 2.8 a 3.2 millimetri, caratterizzate da una colorazione che varia dal grigio scuro, all’ebano, ai toni ambrati. È tra gli storioni più longevi, può raggiungere i cento anni di età, gli 800 kg di peso e fino ai 6 m di lunghezza.
