The texture of the eggs is silky and offers a particularly savoury, briny flavour, accompanied by a subtle hint of hazelnut.

Processed using the Malossol method and golden brown in colour, the eggs can reach a size of up to 3mm.

This particular type, thanks to its strong and pungent flavour, given the age of the fish from which it is taken (18 years), is a favourite with connoisseurs.
