"Coglioni di Mulo" are a cold meat whose shape looks like the testicles of a mule (cojoni di mulo) and are a typical product from Norcia.
It is made by hand-filling a natural intestine with finely minced lean pork meat (shoulder, loin and ham), leaving a small cube of lard in the very middle to aromatise the meat and exalt the flavours. Everything is then hand tied and left to mature naturally.
This salami weighs around 200 gr.
"Palle del Nonno" is a very unique cold meat with honeycomb intestines and a medium/fine grain. What makes it unique is its honeycomb working and the large amount of small pieces of lard left inside compared to other cold meats.
This salami weighs around 300 gr.
This auction is for one "Palle del Nonno" salami and one "Coglioni di Mulo" salami. The products will be sent in single vacuum-packed bags.
