Three bottles of Bollinger Special Cuvee.

It is a beautiful golden yellow with a very fine perlage. It is characterized by a beautiful aromatic complexity, with hints of ripe fruit and spices. Notes of peach and nuances of cooked and compote apple are perceived. In the mouth it manages to combine structure, persistence and vivacity in a balanced way. The palate is velvety with flavors of pear, brioche and spices, fresh walnut.

Pairings: fish, shellfish and white meats. If uncorked for an aperitif, it becomes special with parmesan and prosciutto.

Winery: In Ay, in the heart of the Champagne region of France, is the Maison Bollinger, founded in 1829 by Athanase Louis Emmanuel, Count of Villermont, who chose to join in partnership with the German Joseph Bollinger and with the wine lover Paul Ranaudin . Over the years, after successfully imposing its bubbles especially in the English and US markets, it was Joseph Bollinger who became the man-symbol of the Maison.
Today universally recognized for the great quality of its wines, the cellar, thanks to the privileged position of its vineyards and thanks also to a rigid production ethic, even sanctioned by written principles, has been internationally established for years.

Bollinger Champagnes are recognized among a thousand. The "Special Cuvée" is one of the freshest of the wines offered by the French maison, while not neglecting at all the warm and toasted notes that usually define the finest Champagnes. Bollinger's Champagne Brut "Special Cuvée" is the result of the skilful and delicate blend of a small portion of vintage wine and a majority of reserve wines. Delightful.
